Grapes are selectively hand picked off precious dry grown old vines, planted to shallow sands over light clay sub soils. The old vines deliver harvests of Shiraz grapes endowed by excellent natural acidity, customary acid additions are never required. Grapes are destemmed into traditional open top fermenters and vinified for a fortnight on skins through the action of native yeasts at warm temperatures up to 32C. Gentle hand pumpovers are carried out twice daily for optimal flavour and colour extraction. Upon completion, batches are painstakingly basket pressed and filled to a selection of new and seasoned French and American oak hogsheads for eighteen months prior to bottling.
Dark crimson colour. Powerful nose of turkish delights and exotic spice, clove and black fruits, rose petal, licorice and a touch of dark chocolate mint. Solid, full bodied palate with a litany of fleshy dark fruit flavours. Light dusty tannins contribute structure and mouthfeel. Layers of flavour and texture, a complex wine with super long finish.
