Shiraz Barossa Eden South Australia
John Duval is by all accounts one of the great winemakers of his era. He was thrice named International Winemaker of the Year in London.
Traditional low intervention techniques are employed throughout the vinification. Parcels are inoculated in a selection of small steel fermenters. The cap is closely managed and kept submerged below the ferments. Some batches are kept up to two weeks on skins, other components complete their ferments in completely new barrels. The more subtle French oak was chosen to compliment the blackberry, blueberry fruit characters. Ample structure, texture and fruit intensity provides great potential for improvement in the bottle. Eligo is matured for twenty months in a combination of mostly new and some used, fine grain French oak barrels, the balance one and two year old French oak 300 litre hogsheads. Alcohol 14.5%
Colour is a dense red purple. Perfumed concentration of blackberry, blueberry fruit and fragrant oak. A rich and well structured palate, exhibiting a layered complexity of dark fruit and smokey, savoury French oak. Impressive texture of mouth coating tannins that provide the framework for the richness and intensity of fruit. A powerful but restrained Barossan.
