McWilliams host a formidable team of winemakers who spend much time on the land working with growers to encourage the maintenance of healthy vines and to engage in sustainable land management. Fruit for this very special Shiraz is picked earlier in the harvest to interdict the development of fruit sugars, thereby achieving a lower level of alcohol in the finished wine. Choice parcels of fruit are chosen on the basis of flavour profiles and tannin level before being harvested throughout the cool of night. Following a gentle destemming, grapes are vinified in static fermenters to maximize freshness and flavour retention, before a light filtration. Alcohol 8.5%
