The warm climate of the Riverina region provides the backbone of fruit exhibiting substantive grapefruit and apple flavours. Fruit from the cool climate regions contributes crisp acidity, elegance and finesse.
Yellow Tail's John Casella hand selects only the best parcels of Riesling grapes for the [yellow tail]. He looks for flavour, acid balance and colour. His goal is to produce a bright Riesling wine with clean varietal expressions and aromatics while maintaining the essential softness and drinkability of the [yellow tail] style. The fruit is harvested in the cool of night to retain maximum freshness and flavour. Free run juices are then cold fermented after inoculation by select aromatic yeasts. Once completed, the wine is cold stabilised and cold filtered to retain rich aromas and freshness. Yellow Tail is estate grown, vinified and bottled, ensuring that the final wine is handled to the most exacting standards from the vine to the glass.
