West Cape Howe take a holistic approach to viticulture, soil health and environmental sustainability are essential but a close husbanding of vines is also a priority. The winemaking team dedicate many months leading up to vintage, ensuring that only the best parcels are considered. A vital backbone of Langton Vineyard Sauvignon Blanc is harvested throughout the cool of night at optimal ripeness. Exclusively free run juices are inoculated for a fortnight of cool ferments, closely managed to capture intensity of aromas while preserving crisp varietal flavours. Components are assembled upon completion and bottled early to retain freshness.
