Sheep, cattle and livestock farms make the best vineyards, the soils are made rich by the ruminating quadrupeds, which also serve to promote good drainage, laying the groundwork for excellent viticulture. The proprietors of this sixteen hectare, hands on winery vineyard in Adelaide Hills, chose their ground well, planting the choice property to vines in 1983. Originally selling their fruit to established brands, the fully mature vines are now yielding Adelaide Hills finest red varietal grapes. Hand picked fruit, predominately six different clones of Cabernet Sauvignon, are traditionally vinified and treated to an extravagant eighteen months maturation in a selection of seasoned and new French oak hogsheads and barriques.
Deep plum ruby colour. An initial rush of rhubarb and plum, greets the drinker along with subtler interwoven characters of black cherry, licorice and freshly milled oak spice. The first sip reveals raspberries and loganberry, seamless in complexity and intensity. Cabernet Franc contributes savouryness and luscious berry fruit, Merlot, Malbec and Shiraz add complexity and flesh, ripe and textural fruit tannins structuring the wine perfectly.
