Early Harvest means harvesting earlier in the season, for grapes containing lower levels of sugar. An earlier vintage translates into refreshing wines that are perfect for all occasions. Semillon and Sauvignon Blanc must display lifted ripe fruit characters, moderate sugar levels and a crisp acid backbone. The grapes are crushed and pressed into fermenters to capture the fresh flavours during the cool vinification process. Fewer solids are used to achieve a bright, crisp fruit driven dry white that's low in carbohydrates yet full bodied and complex. Upon completion, components are stabilised and promptly bottled to ensure that the fresh varietal characters are retained. Alcohol 8.5%
