Dayne and Jill Sherwood have been involved in the New Zealand wine industry since the 1980s. In the vineyards, the family and their vignerons are flat out supervising the contract teams around Marlborough and Waipara. Vines are covered with nets to protect the fruit from local fauna. At full physiological ripeness, fruit is harvested in the cool of the night and transported to the winery in one tonne bins where it is gently pressed. Selecting only the free run and light pressings, juices are settled and cool fermented over the course of three weeks. After two months infusing on yeast lees, parcels are assembled, lightly fined and filtered for bottling. Alcohol 13.0%
