Cabernet Sauvignon Malbec Frankland River Mt Barker Western Australia
The magnificence of choice harvests Frankland River and Mount Barker, Malbec and Cabernet Sauvignon, are assembled into an exquisitely perfumed wine of defined, muscular structure and elegant, supportive tannins. Impenetrable blackberry and bramble fruit, liquorice and cassis, are all framed by its length of fine layered tannins and polished new oak. An outstanding construct, from one of the most superlative Cabernet growing appellations on the continent, Castelli offers the excellence and grace to accompany the finest gourmandise.
Fruit is cold soaked for ten days of maceration before being inoculated to Clos and F15 yeasts for a warm vinification at temperatures of 25°C to 30°C. Ferments are pumped over twice daily, and treated to several rack and returns for gentle tannin extraction and clarification. After three to four weeks of ferments, aimed at achieving optimal tannin development and perfect balance, components are filled to a high proportion of new, predominately Bossuet and D’Aquitaine French oak barriques for a luxurious fifteen months maturation. Deep garnet. Sweet blackberries and cassis, liquorice and dark chocolate nose. Medium to full bodied palate supported by fine layered tannins, a solid core of fruit that's perfectly against bright berry acids and affable vanillan oak. Malbec adds muscularity and flesh, rounding out the tannin backbone. Powerfully structured, with the weight of fruit to match bold beef recipes or rare game meats.
