Choice harvests of Shiraz are crushed and held for several days of cold soak maceration, the musts are inoculated to yeasts RC212 and Clos for a warmer vinification at temperatures between 25°C and 30°C. Ferments are pumped over twice daily, while treated to a course of rack returns and a regimen of gentle extractions. After three weeks vinification on skins, timed to retain maximum intensity of fruit while brewing the softest tannins, batches are filled to a high proportion of new French oak barriques and puncheons, predominately Sirugue, Saury and Bossuet, for an extravagant term of extended maturation.
