Parcels of Chardonnay and Pinot Noir are all hand picked off the superior Noack Vineyard at Rocky Gully. Fruit is chilled and whole bunch pressed, retaining only the finest free run juices and minimizing phenolics. Components are treated to a variety of vinification techniques for added complexity, structure and richness, malolactic ferments and long term maturation in seasoned French oak barriques. A course of regular, non-oxidative, lees stirring battonage is employed to develop luxurious mouthfeel and texture.
