Sandro Mosele is one of Victoria's most accomplished vignerons, his celebrated editions of Kooyong and Port Phillip estates are amongst the most cherished renderings of Burgundy styled Pinot Noir in the nation. Mosele has applied his art to a precious parcel of fruit, picked off a single, modest block of vine, grown to the fully fertile soils of a lamb and beef stud, on the brisk, maritime blown coastals of Gippsland South. Chabot Armagnac Vintage 700ml 1968

Chabot distill their Eaux de Vie in a column still and mature their Armagnac in black oak. Over the years the spirit mellows, extracting colour and flavor from the cask. The spirit evaporates over time as the angels take their share, concentrating the fruit and developing complexity. The Chabot family traditionally employed geese as guardians of the premises where the oldest Armagnac Brandies are kept, reposing under the deep, dark ageing cellars. Better than dogs and almost carefree, they serve to prevent any attempt by strangers to penetrate the Chais.
