Giovanni Tait mastered the family tradition of coopering wine barrels before migrating to Australia in 1957. The Heathcote Wineworks were one of the first commercial wineries in central Victoria. Prominently placed along Heathcote's main boulevard, established by Thomas Craven in 1854 to cater for the huge influx of gold miners seeking their fortune. Thomas Craven was a purveyor of spirits and wine, he traded in gold, providing a lifeline to local prospectors. Welcome Brut Réserve, a multi vintage assemblage worthy of the most prestige Cuvée. Brut Réserve comprises the three noble varietals in equal measure, a collation of sixty carefully selected crus, the very essence of Champagne in a bottle. Freshness and elegance of Chardonnay, structure from Pinot Noir, a contribution of generous fruit complexity from Pinot Meunier. A large proportion of reserve wines are included, averaging ten years of age. Once bottled, the wine is aged for a minimum of three years under the ancient chalk cellars, or crayéres. An exceptional ageing process for an extraordinary wine, each release has its own personality, its own irresistible charm.
