Adam Marks is a chicken enthusiast. In his pursuit of the ultimate eating fowl, Marks traced a route throughout the barnyards, orchards and vineyards of La Belle France. He ultimately settled on the Harcourt Valley of greater Bendigo to establish his own agricultural concern in 2004. Welcome Brut Réserve, a multi vintage assemblage worthy of the most prestige Cuvée. Brut Réserve comprises the three noble varietals in equal measure, a collation of sixty carefully selected crus, the very essence of Champagne in a bottle. Freshness and elegance of Chardonnay, structure from Pinot Noir, a contribution of generous fruit complexity from Pinot Meunier. A large proportion of reserve wines are included, averaging ten years of age. Once bottled, the wine is aged for a minimum of three years under the ancient chalk cellars, or crayéres. An exceptional ageing process for an extraordinary wine, each release has its own personality, its own irresistible charm.
