Collector produces extremely small quantities of the most precious wines. Grapes are sourced from a community of growers on the characteristic lean pink granites and reddish shale loams of the Canberra district. The wines are hand made for balance, character and depth of flavour. The exceptional qualities of the source vineyards lie in a splendid mix of granite and shale soils which produce fruit which is perfumed and elegantly structured, savoury, textured and rich. The individual parcels are fermented, pressed gently and matured in a selection of the finest French oak barriques.
