Sauvignon Blanc has found a natural home in the high altitude, cool climate of the Adelaide Hills. Nepenthe are an exclusively Adelaide Hills winemaker, one of the region's most prominent, with an endowment of vineyards. Nepenthe's cutting edge viticulture has gained recognition for producing benchmark Sauvignon Blanc. The vines are meticulously coddled and flavours in the grapes are encouraged to develop fully, with lovely intense varietal characters and bright, natural acids at the higher end of the zingyness scale.
Sauvignon Blanc is sourced from a range of specialized vineyards in the scenic Adelaide Hills. Grapes are harvested in excellent condition to a schedule determined by critical ripening, throughout the early hours of morning, taking advantage of the cool night air which is a feature of the region. Fruit is immediately transported to the winery, crushed, chilled and treated to a pneumatic press, then allowed to settle over three to four days. Juices are racked off solids, the majority of components are tank vinified, a small proportion is fermented on lees in prior use French oak barriques for two or three months. Upon completion, batches are assessed before being considered for inclusion into the finished wine.
Pale straw with a green tinge. Fresh, grassy herbaceousness and vibrant gooseberry characters. Fresh and powerful palate with varietal flavours of guava and melon balanced by notes of green capsicum. Lively lime, herbaceous notes and tropical fruits are supported by fresh citrus acidity that leads to a zesty, crisp finish. Enjoy young alongside seafood, chicken breast or fresh cheeses.
