Adam Marks is a chicken enthusiast. In his pursuit of the ultimate eating fowl, Marks traced a route throughout the barnyards, orchards and vineyards of La Belle France. He ultimately settled on the Harcourt Valley of greater Bendigo to establish his own agricultural concern in 2004. Succulent roasting chickens and ripe juicy apples soon gave way to a range of world class wines, which are defined by their regional eloquence, sublime excellence and bucolic grace. Sauvignon Blanc is planted on near perfect Terra rossa soils, providing an ideal level of nutrient and water retention. Vines are significantly influenced by the cooling sea breezes of the Southern Ocean and it's associated climate. Nearby plantings of Norfolk Island pine (Araucaria heterophylla) which grow to over 200 feet provide an impressive, dominating influence over the surrounding landscape and the vines. Grapes are selectively harvested, full protective handling is employed to avoid any oxidation or browning. Juices are clarified, inoculated and vinified at lower temperatures. Upon completion, components are assembled and bottled immediately to maximise retention of fresh fruit characters.
Pale yellow straw olour. Lifted, floral bouquet with fresh vibrant tropical fruits. Medium bodied palate, lush tropical characters, gooseberry and subtle herbaceous notes that are so distinctive of Sauvignon Blanc, balanced by a refreshing acid mineral spine and persistent chalky finish.
