Max Schubert did more for the development of Australian Cabernet Sauvignon than any other winemaker. He was originally focused on Cabernet as the varietal of choice during his trials with the nascent vintages of Grange. The extensive expanse of Penfold vineyard resources have now been trained to yield parcels of the highest quality Cabernet Sauvignon, regardless of vintage conditions. Max is treated to a temperature controlled vinification on skins to develop the tannin profile, add structure and achieve balance while retaining fresh varietal characteristics. Upon completion of ferments, Max is filled to a selection of seasoned and new French oak barrels for a year's maturation.

A palate of great Cabernet line and defined length, red, blue and black fruits over a length of fine silky tannins, savouryness to the finish, vanilla Chai and sweetly spiced cinnamon, cedar oak.
