Three British Army officers, in their capacity as agents of the East India Company, established one of Western Australia's first agricultural enterprises in 1836. An intensely fragrant blend of freshly squeezed tahitian lime and blossom frangiapan over a subtle hint of wet stones, youthful and bright, fresh lime intense on the palate. A term of extended lees contact and four months stirring battonage introduces complexity, textural richness, crisp and dry, a beautiful line of grapefruit acidity to the finish.
