Cabernet Sauvignon Coonawarra South Australia
Rockbare work to a belief that wine should tell a story about the terroir whence it originates, that the vines deserve lots of love and care, that the winemaking process should be the subject of minimal handling to allow growers to do what they do best. Hand selected parcels of Coonawarra Cabernet Sauvignon are cold soaked for a fortnight of spontaneous ferment on skins, an extended gentle press into a choice selection of seasoned and new, European and French oak casks, followed by malolactic and a year's maturation. Coonawarra Cabernet Sauvignon of elegance and controlled power.
Purple red with violet hues. Varietal herbaceous mint, briar and tomato leaf, blackcurrants, dusty cigar box and a hint of sweet toffee. Vibrant and youthful palate of blackcurrant pastille, wild berries and a lick of fresh stalky high notes meld with dark chocolate, a savoury touch of black olive and hints of nutmeg and cassis. Taut acidity and cedar oak hold the palate together, supple tannins contribute to the lengthy, dry and chalky finish.
