Cabernet Sauvignon McLaren Vale South Australia
From choice vineyards in McLaren Vale's southeast, Clarendon and Blewitt Springs, a Cabernet Sauvignon of vibrant fruit, solid structure and succulent textures, with a gentleness that belies it's varietal provenance. The enduring Tatachilla wineworks represent a century of viticulture, still yielding fruit from vines established 1903, when the property was owned and operated by Penfolds. Throughout changes of ownership and an evolution of the national palate, Tatachilla has continued to release a remarkable construct of McLaren Vale Cabernet Sauvignon.
Cabernet Sauvignon is harvested off the estate's Clarendon vineyard and from good sites operated by dedicated growers around Blewitt Springs and McLaren Vale township. Fermentations are initiated in small eight ton vats for a term of several days at temperatures peaking to 28C, the grapes are actively handled to extract as much colour and tannins as possible. Batches are treated to a course of traditional pumpovers, with rack and return methods implemented for the extraction of musts from the skins. Following completion of malolactic, Tatachilla is matured in a combination of one and two year old French oak barrels, infusing complexity into the finished wine and achieving optimal balance.
Dark red with crimson hues. Black pepper and nutmeg bouquets, licorice and dark chocolate over earthy hints. Blueberry and vibrant blackberry upfront balanced by a powerful tannic structure and smooth middle palate. Characters of roasted almonds and fresh coffee before a long finish that lingers in the mouth on notes of licorice and cocoa notes.
