It was a matrimony between an American biochemist and the founder of Margaret River Devils Lair, that set the scene for one of the nation's most illustrious estates. A member of the Top 1OO Wineries of World, Giant Steps were established 1997, with a view to assembling an elite range of limited release Yarra Valley vintages. There are but two winemakers who can lay claim to a staggering four Jimmy Watson Trophy victories. Wolf Blass was the man behind the label. John Glaetzer was the man behind Wolf Blass. Vega Sicilia is unquestionably a unique wine, one of the great Spanish classics. It's personality is derived from the quality of fruit, rigour at elevage and uncompromising attention to detail throughout vinification. The ageing of Unico Cosecha begins in the January following vintage, initially in large capacity wooden vats for up to two years before a regimen of racking into a progression of new and seasoned, estate coopered oak casks. Over a course of seven to ten years, the wine is transferred from younger to older oak, with a view to achieving harmony and integration. After several years of racking and transfer, Unico Cosecha is finally rested in larger wooden vats and prepared for bottling.
Cherry with ruby robes. A complexity of aromas, fine oak, compote and balsam, rosemary and menthol. Palate entry is subtle and discreet, followed by an opulence of fruit characters. Notes of tobacco and menthol, blackberries and prune integrate with the extravagant oak, supported by dusty, leafy tannins, for a wine of remarkable aromatic complexity and immeasurable palate persistence.
