The viticulture at Yabby Lake is all about realizing minimal harvests of small bunches and tiny berries, more quality and just a little less quantity. Pinot Noir clones MV6, G5V15 and DV24, from Blocks 1, 2, 5 and 6, grown to the sandy clay loams of Yabbly Lake Vineyard at Tuerong. Grapes are hand picked, hand sorted and destemmed into traditional open top oak fermenters, a fifth is included as whole bunches. Vinifications are hand plunged up to three times daily as temperatures peak at 32ÂșC, batches are pressed off skins after a fortnight of ferments into a selection of 500 litre French oak puncheons for completion of malolactic and eleven months maturation.
Great depth of colour. Ripe black cherry, dark forest berries and asian spice with perfumed oak aromas. The palate displays a complex array of ripe small berry characters and spicy oak. Yabby Lake has excellent density, concentration and pin point balance. It is the texture and mouthfeel of this wine that is most exciting, rich and velvety with intense varietal fruit flavours and a powerful long finish.
