There were two scrub covered parcels of land, just outside Pokolbin village along McDonalds Road, that local council had long set aside for use as cricket ground and cemetery. Parcels of Chardonnay grapes with a slightly larger component of Pinot Noir are hand picked from the most prestigious vineyards within the comprehensive Hardy viticultural portfolio in Tasmania. Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. A traditional expedition dosage completes the process, adding the last components of complexity and ensuring precise palate balance. Alcohol 12.4%
Crystal clear with an extremely fine bead and persistent mousse, delicate colour of fresh straw with a bright green/ gold hue. On the nose, the wine has an unmistakably inviting and complex melange of aromas with influences of fresh oyster, sour dough yeast as well as the aromas of exotic spices, vanilla bean and nougat. An elegant, mineral palate structure with flavours evolving in the glass around lychee, truffle, cinnamon and lanolin. Exhibits fantastic persistence of flavour, the natural acidity and subtle quality oak tannins are the backbone of this textural wine.
