Shiraz Clare Valley South Australia
A consistent wine show winner in Australia and around the world, just think of thick barbequed T Bone or rib steaks for this succulent Shiraz by one of Clare Valley's most formidable family owned estates. The palate delivers everything it's fine bouquet promises, a sumptuous wine with rich plum and spice characters, the tannins are sleek, persistent and fine. Taylor is renowned for silky, seamless textures, a gentle, fragrant palate and persistence of exquisite Clare Valley regional mint and blueberry characters.
Climatic conditions are perfect for the vines during a Clare Valley summer, generally warm to hot and dry days with cool nights. This is critical for slow, even ripening and provides wonderful intense varietal characters in the Shiraz. Fruit is harvested throughout the cool of evening. Following primary fermentation, juices are treated to a pneumatic bag press with all pressings returned for added palate weight and texture. Batches are filled to barrel for completion of malolactic and a year's maturation in American oak, followed by egg white fining and minimal filtration before bottling.
Deep red colour with ruby red hues. Vibrant and lifted with aromas of plum, blackcurrant and dark cherry along with black olives and a touch of oak derived spice. The palate is rich, luscious and round with intense, perfectly ripened fruit, roasted coffee bean oak complements the generous fruit flavours. Medium to full bodied, supple tannins, a well balanced structure with great texture, good length and a persistence of fruit on the finish.
