Sauvignon Blanc thrives in the cool climate and high altitude of Adelaide Hills, it is here that the true essence of this special grape develops fully. The crisp spring and early summer weather preserves the fruit's natural acidity, which heightens and enhances the flavour of this noble variety. To accentuate the fruit freshness, Mojo have treated their Sauvignon Blanc to a long, languid fermentation which takes up to three weeks, but the result is worth the wait. The Mojo team suggest serving chilled, but not too cold, at 5pm on a weekday arvo with good mates.
Adelaide Hills are renowned for exceptional white wines, the myriad folds and undulations form a wide range of microclimates, whilst the beautiful verdan valleys crisscross the north-facing slopes to capture the sun and provide protection from the strong cold southerly wind. Sauvignon Blanc is harvested from good vineyards, hand chosen by the Mojo team, throughout the cool of night. Fashioned to a decidely fresh and fruit driven styling that's thoroughly Adelaide Hills, a component is vinified on skins to extract punchy, sweaty passionfruit flavours, a course of lees stirring infuses complexity and texture. A portion is treated to oak barrel ferments for richness and palate length.
Pale green hues. Subtle light tropical fruit aromatics of guava, lychee and passionfruit, hints of freshly cut grass and lemon blossom. Fleshy upfront fruit, gooseberries and passionfruit, a lick of freshly picked herbs. Mid palate is well complimented by textural notes of crunchy green apple and nashi pear whilst being supported by crisp, lively fresh lime acidity, leading into a lengthy, clean grapefruit tang on the finish.
