Sacred Hill has graced the tables of royalty and movie stars, claiming a litany of awards and sharing accolades with some of Australia's most cherished wines. A fruit driven Chardonnay style with great texture and superb balance, crisp acidity and zesty citrus stonefruit characters balanced by a subtle touch of Fench oak. A wonderful partner to all seafoods or freshly tossed chicken caesar.
De Bortoli will always be at the fore of sustainable and environmentally sound viticulture. The philosophy being that great wine begins in the vineyard and that the winemaker should use minimal handling or interference. Wine should have a sense of place and be an expression of the soil. Consideration is given to those vineyards which can best display the qualities characteristic of Sacred Hill, healthy berries profiling vibrant, fresh melon and stonefruit. Chardonnay is fermented over the course of a fortnight at temperatures between 12°C and 14°C, some parcels are vinified on fine French oak. Upon completion, parcels are racked off gross solids and rested on fine yeast lees to build structure. Alcohol 13.0%
Pale straw green hues. Fresh pear and stone fruit aromatics, supported by notes of fine French oak. Up front fruit palate sweetness, peach and melon flavours, the mid palate shows a creamy weighted texture from lees stirring. A hint of oak contributes structure without overpowering, the citrus and stonefruit characters are allowed to dominate.
