Sacred Hill is an ode to a hermit made famous in Riverina folklore. Like his eponymous wine, he kept a low profile but was highly revered by all who knew him. For those who may be partial to a juicy wine with a measure of luscious grapey sweetness, Sacred Hill will be the first choice. Topical Gewurztraminer rose petal characters are in full bloom, musk aromatics and ripe lychee fruit flavours are finely nestled within a soft, aromatic palate. Traminer and Riesling are chosen for their vibrant varietal characteristics and capacity to assimilate into a harmonious wine. Parcels of Traminer are selected for spicy musk, floral and rose petal flavours which can combine with the floral and citrus characters of Riesling. Choice yeasts which can enhance the lively fragrant character of the wine are essential to the style. Each parcel is fermented separately at cooler temperatures between 12°C and 14°C over the course of a fortnight, retaining lively fruit flavours and freshness. Upon completion, batches are assembled, clarified and stabilised prior to final filtration and bottling. Alcohol 12.5%
