Barossa Cabernet Sauvignon is known for its richness and warmth, a generous red wine that's balanced and approachable even in its youth. Wolf Blass source fruit from vineyards which have been trained to provide vintages of Barossa Cabernet with perfumed fruit characters, vevety chocolate berry flavours and genteel tannins. Just splendid alongside roast lamb racks and smashed potatoes, dressed in garlic and red wine jus.
Parcels of Cabernet Sauvignon are sourced from low yielding vineyards in the eminent Barossa precincts of Dorrien, Light Pass and Moculta, long established winegrowing communes which are well known for yielding harvests of complex, elegant fruit with intense varietal characters. Following the crush, individual vineyard batches are vinified in small open fermenters, while treated to a regimen of plunging and pumpover for optimum release of colour and flavour without excessive extraction of tannin. Components are transferred to a selection of seasoned and new French oaks for an extended term of age, building structure and integrating complexity.
Deep crimson with purple hues. Rich in dark aromatics of black cherry, currant and blackberries, seasoned by leafy undertones of tobacco and wild herb. A fresh and juicy, concentrated wine on a full bodied, focused and precise palate supported by long, textural tannins, balanced acidity, elegant line and persistent flavour.
