Cabernet Sauvignon Merlot Barossa South Australia
A mostly Barossa wine fashioned at an ancient wineworks that was once Hardy's Siegersdorf. The remarkably approachable Cockatoo Ridge has seamless wood and fruit balance that seems to call for another glassful! Rich and soft, an equitable arrangement between two of the most compatible noble red varietals.
The strength of Cockatoo Ridge lies in the estate's dedication to quality viticulture, superior fruit, and consummate devotion to maintaining the highest standards. An assemblage of high quality Merlot and Cabernet parcels, the former provides structure with the ability to develop whilst the Merlot contributes richnesss to the mid-palate. A combination of crushed and whole berries are inoculated, while other ferments are drained and returned for maximum extraction of colour, flavour and tannins from the skins. By so doing in combination with moderate fermentation temperatures, a complex array of base wines from which a Cuvee of generous fruit flavours and approachability can be determined. Alcohol 14.5%
Vibrant crimson red. A very attractive nose displaying dark chocolate, mint and blackberry fruit aromas, along with subtle toasty oak. Palate shows an attractive full bodied wine expressing powerful rich cherry and mint flavours, with some spicy characters, on a backbone of soft velvety tannins. Secondary impressions of dark soy and briar, mulberry, blackcurrant and plums with a generous balance of oak and a finish of good persistence.
