Excellent Langtons Classification. The timeless Claret style of red wine, this is the bespoke blend on which Yarra Yering's reputation was built and continues to endure. Mostly Cabernet Sauvignon with portions of Franc, Merlot and Petit Verdot. After a few years of trials and tribulations to achieve the ultimate construct, Dr. Carrodus decided to made the macerated component of No.1 blend dominant and upfront. A wine of great clarity and depth, medium bodied and low in alcohol, suggesting delicacy within a sleeping powerhouse of precision.
Vines are pruned to yield no more than two tons to the acre. Founder Dr. Carrodus always aimed for a consistency of quality through a program of obtaining optimal ripeness of fruit each year. The dry farmed vines are hand harvested into small plastic buckets. Vinification begins within two hours of picking, as fruit is passed through an antique Amos crusher and destemmer, into specially designed one ton stainless steel lined fermenters. Approximately a third of components are kept on skins for three weeks maceration before being transferred to barrel for ferments. Dry Red No.1 is matured in nothing less than the finest quality, exclusively new French oak barrels.
Deep ruby colour. Attractive vanilla cedar nose, red and black fruits, dried herb and scorched earth notes. A deeply structured palate, heavily laden with enticing fruit flavours, blackcurrants, olive and mint against a background of warm French oak. The structure and tannin balance are magnificent, bramble berries and dark fruit flavours linger on the seemingly endless finish.
