The Wolf Blass team are beqeathed with an exhaustive range of distinguished old vineyards from which to assemble the finest parcels of Shiraz. Constant contact with growers ensures that vines are coddled to yield harvests of marvelous intensity and exemplary varietal charm. Wolf Blass are on the lookout for fruit that's generously proportioned yet elegant. Components are chosen for the depth and structure they can contribute to the sum of parts, the final wine completes fermentation in luxury oak barrels to infuse exquisite perfumes while taming the earthy tannins.
Shiraz is sourced from superior vineyards in McLaren Vale, some have been supplying fruit to Wolf Blass for decades. Parcels are separately crushed into small open top fermenters. A course of plunging and gentle pumpovers are employed for optimal extraction of colours, fruit character and plush tannins, hallmarks of the Grey Label style. Some batches complete their ferments in barrel, the balance remains on skins until fermented to dry, lengthening tannins, enhancing palate line and achieving a clean lingering finish. Components are aged eighteen months in a selection of seasoned and new French and American oak barrels before assembling into the final wine. Alcohol 14.5%
A rich deep crimson colour. Heightened aromas black and boysenberry, pepper, spice and dark chocolate, restrained vanilla and cedar notes play a supporting role. A plush, rich palate of great intensity and concentration, lengthened by fine acidity and supported by a velvety tannin structure, a wine of elegance, power and poise. Serve with rib eye or teppanyaki beef.
