Sangiovese Merlot King Valley Victoria

Made without the use of oak, Sero offers unique flavours and styles of deliciously blended European varieties that are delicious with food. Picked at optimal maturity, the Merlot and Sangiovese are cane cut to partially raisin the fruit before picking. This raisining of fruit gives fantastic richness of flavour as well as a savouriness which is quite dry and interesting. A blend of cane cut and normal fruit is crushed and destemmed to static fermenters. The must is fermented at ~27˚C for seven to ten days then pressed. The Merlot and Sangiovese are put together and resultant blend then undergoes some micro oxygenation in tank which softens the wine, in pure fruit driven unwooded styling. Full malo-lactic fermentation. Alcohol 14.0%
