Cabernet Sauvignon Shiraz Coonawarra South Australia
Vintage 2008 will be remembered for Bin 620, a legendary Penfolds wine from a great Coonawarra year. The unique and enduring Australian mix of Cabernet and Shiraz, from the pick of low yielding Penfolds Coonawarra Blocks 5, 10 and 20, a harvest of the most superb quality fruit, a collation of parcels exhibiting tremendous definition in flavour, affording the construct of a wine similar in stature and style to the original 1966 Bin 620.
The Adelaide Hills components were brought to the Penfold headquarters at Magill Estate for a course of vinification in a legacy of ancient open fermenters, Barossa parcels were taken to the wineworks at Nuriootpa for a term in old fashioned static fermenters. Basket and membrane pressed for malolactic, some parts were barrel fermented in new French and American oak barrels to integrate all the elements into a wine of impressive complexity and depth. An equal balance of Cabernet Sauvignon and Shiraz, batches were matured in a selection of completely new French and American oak hogsheads. Alcohol 14.5%
Deep dark red core. Redolent of red berries, red licorice and black juicy olives, wafts of tomato and quince, cinnamon and nutmeg yeast bun spice. Seamless, sophisticated, stylish, flavours of cola, sarsaparilla and white chocolate, structure and textural weave, tightly focussed and poised, over a length of fine and persistent shaley tannins, bright acidity propels the complex array of Cabernet and Shiraz fruits.
