Shiraz Padthaway South Australia
From those wonderful folks who bring us Morambro Creek. The sole objective with Jip Jip Rocks is to produce the best wine possible from a unique site. Planted on own rootstock and located in the Padthaway Valley which is endowed with rich Terra rosa soils, the Morambro Creek property enjoys excellent sun exposure to achieve grapes of optimal flavours, colour and tannin. Vintages can be dry with little or no rain during fruit set and growing season. Berries are quite small and yields are minimal, flavours are concentrated and the quality superb.
Since 1851, five generations of the Bryson family have been a part of South Australia's agriculture. A pursuit of great wines begins in the meticulous management of the vineyard. The team strive for low crop yields and small grape bunches of intense flavour, harvest is only ever undertaken when the berries reach full development. Shiraz is vinified ten to twelve days in a combination of open and static fermenters, closely monitored to ensure the wine retains its natural expression of fruit character. A selection of new and older French and American oak mature the batches for thirteen months, followed by an assemblage aimed at capturing the depth and character of Morambro Creek wines. Alcohol 14.5%
Deep scarlet red. Lifted spice and ripe mulberry/ blackberry aromas are complimented by chocolate, cinnamon and cedar. Well integrated oak tannin contributes flavours of clove and vanilla, a supple texture supports the rich plum, blackberry and mocha characters. The overall structure is supple and generous with finely grained tannin on the finish enveloped by ripe fruit.
