The separate parcels of generously flavoured, tightly structured Chardonnay were sorted and crushed back at the winery, fermentation was initiated with selected yeasts to enhance the natural characters of Western Australian fruit, after which the individual batches of wine were racked until taste trials and the final blending. Parcels of this wine were aged for a term of months in quality French oak.
Pale straw colour. Aromas of melon and grapefruit combine with hints of spice, derived from partial aging in French oak. Fig and citrus flavours on a fresh, balanced palate with more tropical and stone fruit touches. The wine is refreshing, poised and graceful, a creamy well balanced mid palate, before a clean acid finish adding complexity and considerable length.
