Bin 707 has established international renown as the new world's final word in Cabernet Sauvignon, it has endured for decades as an articulation of the vintage and of its provenance. A graceful yet statuesque construct, the essence of Cabernet Sauvignon, imposing in it's breadth and scope, it continues to unravel layers of complexity as it evolves for hours in the glass.
From superior Cabernet vineyards in the Coonawarra, Padthaway and Barossa Valley, Wrattonbully and Adelaide Hills.The finest parcels in the land are always reserved for Bin 707, if and only if, the quality of vintage meets Penfolds exacting requirements. Everything about Bin 707 is done on an expansive scale in a big way. The winemaking team seek parcels of Cabernet grapes, endowed with a concentration of flavour without peer. The tannins must be polished and clean, textural and refined. Vinification is meticulous. Following completion of barrel ferments and a course of malolactic, components are treated to a luxurious thirteen months maturation in completely new American oak hogsheads. Alcohol 14.5%
Deep purple, impenetrable black core. Barrel ferment notes to the fore, hoisin and smoked nuts and meats, an intensity of tomato paste aromatics, a final wave of liquorice, black forest and tiramisu, coffee and affogato. Full bodied, mouth filling palate, layered and complex, blackcurrants and chocolate fondant. Tannins omnipresent, yet calmly conveyed by the wine’s lush fruits and densely textured extract. Oak totally absorbed, certainly at one with the wine.
