Coonawarra Cabernet seemed to be the only fruit which distinguished itself this vintage, heatwaves and a dry growing season destroyed the size and quality of grapes. Coonawarra terra rossa Cabernet was spared the fate of most Australian wines, Penfolds took the decision to release a Bin 707 from the 1989 vintage, solely on the quality of their superior Cabernet fuit, and the stature of the finished wine. As always, only ever released if the result meets exacting standards worthy of Australia's best Cabernet, wonderfully complex and engaging.
Few winemakers command the arsenal of source vineyards and traditions of winecraft, for the purposes of fashioning Australia's most super premium Cabernet, as Penfolds. The approach is unique because of Penfolds commercial evolution from major fortified wine to table wine producer. The concepts of multi-district blending and house style are central to fortified wine production. The success of the Penfolds Bin 707 is largely based on a highly identifiable thumbprint. Admittedly one of the more capricious noble varietals grown around Australia, when it comes to the final selection of batches of fruit from superior vineyards, the Bin 707 winemakers are looking for immense characters, concentration and chocolatey tannins.
Medium crimson, cassis/ leafy aromas with some minty notes. Slightly cooked fruit, partly redeemed by the deep flavours of a textbook solid, chewy Bin 707 palate, sweet cassis/ minty flavours, leafy tannins. An immediate, intense lift of pure ripe blackcurrant fruit, laced with mint and the faintest suggestion of violet. Cigar box and fresh tobacco oak notes showcase the sheer fruit quality. Powerful and complete. Saturated fruits have soaked up the new oak culminating in a rich, sweet mid-palate and long stylish finish. The depth of fruit and defined structure, coupled with obvious muscular tannins, suggest that this wine is built for the long term. Blackberry and blackcurrant flavours persist long after the wine has been tasted.
