Chardonnay and Pinot Noir are harvested from Deakin Estate vineyards. An early picking, gentle processing of exclusively free run juices, close attention to composition and clarity, a cold and slow fermentation with traditional sparkling wine yeasts is followed by a course of yeast lees ageing, achieving a wine of freshness and delicacy. The parcels are assembled and a reserve volume included for complexity and depth. Finally, a second fermentation is initiated to naturally charge the wine with effervescence and bring everything into harmony. Alcohol 12.0%
Pale straw colour, the wine exhibits a very fine bead. Finely balanced, a rich wine offering traditional creamy characters of yeast and brioche, stonefruits and cashew, the Pinot component delivers perceptible nuances of cherries and violet. Gold medal winner at the 2012 Decanter World Wine Awards.
