Cabernet Sauvignon Coonawarra South Australia
St George is the archetypal full bodied, engaging and complex Coonawarra Terra Rosa Cabernet, sourced from the celebrated twelve hectares of St. George Vineyard, known to feature some of the eldest, most reputable plantings in all Coonawarra. St George is the fruit of painstaking viticulture, treated to a century and a half of accumulated skill in the vinification, as practised by the most skilled members of the award winning Lindemans team.
At the heart of Coonawarra lie unique rich, red Terra rossa soils atop soft porous limestones, over a fortuitous water table. The particularly low yielding St George Vineyard is located directly on the limestone spine of the Terra rossa strip. The overriding objective of the winemaking team is to produce a mighty, classically Australian Cabernet which expresses the personality of this superlative site. As the vines struggle to extend their reach to water, their growth is restricted and grape yield constrained, while the long ripening period slowly builds the intensity of flavours. St George is matured eighteen months in a combination of new and prior use French oak barriques. Alcohol 14.3%
Dense inky purple hue. Blackcurrants, black olive, violets and tobacco aromas are interwoven by nutty oak, complexed by subtle tar and red earth aromas characteristic of St George Vineyard. Fresh blackcurrant fruit with savoury tannins create a tightly framed palate that's elegant yet powerful. Lovely and rich, St George is laden with varietal Cabernet fruit, cushioned by pliant tannins, showing great weight of fruit before a long, memorable finish.
