Cape Mentelle take a minimalist approach towards this classic Margaret River style of white. The aim is to preserve as much fruit intensity and regional character as possible, whilst achieving a soundly structured, finely balanced wine. Cape Mentelle accentuates the freshness and vitality of Sauvignon Blanc and Semillon, enriched by the added complexity and bonus palate weight, delivered through a measure of barrel ferments and a term of age, infusing flavours and texture whilst resting on sedimentery lees.
The lion's share of fruit comes from the cooler southern half of Margaret River, notably the estate's own Chapman Brook Vineyard and other choice sites. Various canopy management methods are used, with the objective being to maximise fruit flavour development. Soils are geologically ancient, free draining sandy loams with a high percentage of lateritic gravel. Emphasis is placed on capturing vibrant fresh flavours with clean acidity. Fruit is generally harvested throughout the chill of night to take advantage of cooler temperatures. Vinified mostly in fermenters, a component is treated to a selection of new and seasoned French oak barriques, followed by a term on yeast lees before the final assemblage. Alcohol 13.0%
Pale straw with lime green hues. Punchy lifted aromatics of lemon blossom, blackcurrants and papaya with subtle hints of fresh thyme and cordite. Medium to full flavoured with fine textures. Limes, apples, lychee and honeydew melon characters are framed by juicy acidity, providing great length of flavour. Drink young and fresh alongside whiting or crab.
