Sauvignon Blanc is sourced from good vineyards in the Wairau and Awatere Valleys. The range of mesoclimates provides a spectrum of flavour profiles and affords the opportunity to maintain continuity of style. The majority of sites are trained to vertical shoot position, special care is taken to maintain vine health, clean fruit and balance. Parcels are harvested over several weeks at varying levels of ripeness. Fruit is crushed, pressed and cold settled before being racked clean off lees for vinification. Neutral and aromatic yeast strains are employed to inoculate the clear juice. Fermentations are conducted at cooler temperatures, to retain delicate flavour and preserve aromatics.
