The strength of St Clair's Sauvignon Blanc lies in the selection of fruit and urgent handling of the wine. Grapes are sourced from a selection of vineyard, located in the Dillons Point and lower Wairau sub regions. Each block is harvested at maximum flavour maturity and physiological ripeness. Fruit is transported to the winery and pressed off immediately to minimise skin contact or juice deterioration. After settling, each batch is vinified at cool temperatures through a variety of choice yeasts to retain fruit flavour and freshness. The parcels are assessed for quality and only those components best exhibiting the potential to contribute quality and complexity are included into the finished wine. Alcohol 13.0%
