Pinot Gris Grigio Hilltops New South Wales
McWilliam's has long been a major player and staunch supporter of the emerging Hilltops as a premiere viticultural precinct, retaining some of the region's most salubrious vineyards. Career farmer and veteran RAAF fighter pilot Peter Robinson planted his Barwang property to cuttings procured from McWilliams in 1969. The prodigal vines returned to McWillians stewardship and today contribute the backbone of fruit for Barwang Pinot Gris.
A collation of harvests are separately handled to retain the individual charm of each vineyard. Fruit is gently crushed and cold settled to 6°C, skins are removed to minimize extraction of phenolics and the deep Pinot Gris colour. Batches are racked into fermenters and inoculated through choice yeasts, selected on the basis of enhancing fruit character whilst contributing palate weight and texture. A long cool vinification captures the intensity of vibrant Pinot Gris flavour, followed by a further term on sedimentery yeast lees, to infuse greater complexity, before stabilising and early bottling for the retention of vitality, ensuring a fully fruit driven palate and heightened varietal aromaticness.
Medium straw hue. Floral and fruit notes, peaches and granny smith, pear and nectarines, creamy vanilla yoghurt notes. Intense varietal characters of pear drops and almond dominate the palate, texture, complexity and length, the fresh acidity gives focus and adding structure, before a lingering and refreshingly clean finish.
