McWilliams have been at the forefront of viticultural practices since 1877 when Samuel McWilliam planted his first vines. McWilliams makes a point of waiting until grapes are fully ripened before scheduling a harvest. Only upon reaching optimal levels of ripeness, fruit is harvested in the cool of the night to capture the fresh, zesty characters. Grapes are crushed into drainers where the premium free run juices are separated from the skins. At all times a delicate handling throughout the clarification and fermentation stages is vital to retaining the vibrance of fruit and preserving the idyllic levels of natural sugar within the grapes. Inheritance is then assembled and stabilized prior to filtration. Approx 10.5%
Light straw colour with golden hues. Aromatically invigorating, with honeyed fragrances of blossom, a zest of orange, homemade lemonade characters and a floral lift. Tropical flavours, passionfruit, pineapple and lychee dominate, complemented by citrus, nougat and fruit filled meringues.
