Cabernet Sauvignon Shiraz Victoria
Ever since the establishment of Scotchman's Hill to the balmy maritime aspects of Bellarine Peninsula, the award winning team have been on the lookout for harvests collated from climes further afield which are worthy of the estate label. In this case, the pick of Cabernet and Shiraz grown to choice vineyards, has been assembled into a solidly structured accord, exhibiting prominent spiced plum and berry flavours supported by firm stalky tannins, all fashioned into the enduring Scotchman's Hill style.
Established 1982, Scotchmans Hill has become the source of Geelong's most complex, elegant and consistent wines. As an extension to their activities, the Scotchmans Hill contract consultancy company allows suitable grape varieties to be grown in appropriate mesoclimates throughout the spread of viticultural precincts across greater Victoria. Following the harvest, fruit is transported to the Scotchmans Hill wineworks at Geelong, crushed and de-stemmed into fermenters, inoculated to choice yeasts and vinified on skins until completion, a term of malolactic and transfer to a selection of fine grained oaks for maturation.
Bright ruby in colour. The nose is complex with ripe blackcurrants, red berries, cherries and plums with spice and a touch of mint rounded out by spicy charry oak. A rich and full flavoured wine with sweet fruits of blackcurrants, plums and cherries with smokey cedar in the background. This is complemented with spice, cedery oak and a charry finish. The Hill exhibits excellent texture and balance.
