Shiraz Clare Valley South Australia
A benchmark Clare Valley Shiraz, St Andrews is a true labour of love for the Taylor family, sourced from a historical property adjacent to the wineworks. St Andrews continue to attract an impressive array of international awards and recognition for their outstanding quality. Shiraz grapes are selected from Blocks A30, S50 on the St Andrews Vineyard. Small quantities were also selected from sensational blocks which contain some of the oldest vines on the Taylor family estate, traditional 1654 clones of Shiraz, planted in 1969.
A schedule of hand picking at 14.5 baume was determined by regular tasting of the berries on the vine, the winemaker seeking optimum flavour characteristics and ripe tannins. Grapes are destemmed and the must cold soaked for maximum colour and flavour extraction. Transferred to static steel fermenters for inoculation with the L2226 Rhone yeast strain. Fermentation continued at a constant 22C to 28C for ten days after which the wine was treated to a pneumatic bag press. St Andrew was then moved to American oak (water bent) barrels for secondary, malolactic fermentation. The wine was then racked and matured in American oak for fourteen months before being fined and filtered for bottling. Alcohol 14.4%
On release, the wine is developing brick red with a deep crimson heart. The wine has enticing and complex aromas of plum fruit, violets, spice and creamy vanillin from maturation in American oak. This is a mouth filling wine which has a richness to its texture yet still has a certain elegance. Fruit flavours of purple berries complexed by subtle spice and faint cedar are evident along with pleasurable warmth to the palate. The finish is long and persistent.
