Jaraman is the aboriginal word for seahorse, so named after the fossilised remains found on the Taylor property. Jaraman is a wine of regional diversity, a harmonious consolidation of terroirs. Enter Jaraman Shiraz, a multi dimensional wine and tour de force embodying the expressions of two distinct Shiraz regions, comely Clare township and the mighty McLaren Vale. Jaraman is a generously proportioned wine that fares exceptionally well with all cosmopolitan cuisine, a treat alongside Chinese pork or mousaka, ripe mature cheeses or liver pâte.
A backbone of Shiraz from the Taylor property in Clare Valley is harvested throughout the cool of night. A further component is sourced from sites in McLaren Vale's north, where temperatures are moderated by breezes off Gulf St Vincent. Grapes are de-stemmed and the must transferred to fermenters. Inoculated by a specialist Shiraz yeast and vinified at a constant temperature, a component rests on skins to increase tannin and colour extractions. Batches are treated to a pneumatic bag press and transferred to a mixture of new and prior use American oak hogsheads and barriques for malolactic. After a year's maturation, the final wine is fined and filtered for bottling. Alcohol 14.5%
Deep opaque red colour, ruby hues at the edge. Lifted aromas of spices and plum, red berries and violet along with chocolate and subtle cigar box characters from the oak maturation. A rich and mouthfilling palate with ripe dark berry fruit flavours, along with spice, chocolate and freshly roasted coffee characters. Finely balanced with a linear acid line and grainy tannins.
