Cabernet Sauvignon Merlot Yarra Valley Victoria
The Yarra Valley is characterised by cool weather patterns and slow consistent ripening conditions, enhancing the fruit with complex flavours. With a proud history of winning competitions, including Trophy at the Royal Melbourne for Best Victorian Red, Lillydale was amongst the very first Yarra Valley estates to emerge during the rekindling of interest in Australian table wines during the 1970s. The climes around the estate's Morning Light and Sunnyside vineyards yield fully ripened, well concentrated and elegantly flavoured black grapes.
Lillydale Estate consistently produces very high quality, award winning wines. Grapes are picked throughout the cool of the night to retain fresh, elegant fruit flavours. Vinified in a combination of rotary and headed down open fermenters over a periood of seven to nine days. Most of the ferments are held at 22C and drained and pressed at 2 of baume. This portion completes malolactic in a mixture of new and prior use oak barrels. The extended maceration portions are fermented to dryness and rested a further three to four weeks after completion. The components are then drained and pressed straight into a mixture of oak hogsheads for maturation before the final wine is assembled.
Brick red with crimson hues. A lifted bouquet of brambles and herb, forest berries and violet combined with brown spice, cinnamon and clove/ vanillan oak. An elegant, medium weight wine with blackcurrant, red cherry and herbaceous fruit flavours balanced with spicy, nutmeg oak characters. A tight fine tannin structure binds the wine together to resolve on a soft, refined finish.
