A measure of Merlot and Malbec can be added in varying proportions from vintage to vintage, softening the tannin profile and contributing perfumed, floral lift to the beautifully fragrant nose. Intense and statuesque, yet elegantly structured, it is the single most enduring Margaret River wine. Cabernet Sauvignon is a robust varietal that consistently achieves a high quality wine when grown to the Margaret River's temperate ripening conditions and deep, well drained soils. All parcels are vinified separately before eighteen months maturation in a combination of new and older French oak barriques, followed by individual batch selection and the final assemblage.
Deep maroon colour, slight purple hue. Stunningly complex perfume, exhibiting a level of integration that makes the wine difficult to pull apart. Layers of blackberry and blackcurrant mingle seamlessly with hints of dried herbs and candied orange. Fragrant, spicy oak sits beautifully in the background. Succulent blackberry and cassis fruit flavours provide a ripe density to the palate, oak spice adds a savoury edge.
