Parcels of Semillon and Sauvignon Blanc which can best display varietal purity are picked early for this style, drawing on the distinctive regional endowments of Barossa Valley and Adelaide Hills. Grapes are picked early, crushed and chilled, the juices are immediately separated from skins to enhance delicacy. Following a controlled, cold tank fermentation, Clancy is clarified for bottling.
